A Transylvanian dinner with author Irina Georgescu

With a passion for exploring the world through food and discovering new flavours, Irina joins us to cook up a delicious Transylvanian feast!

UK food writer, author and James Beard award winner Irina Georgescu was born in Bucharest, Romania, where she lived for 30 years before moving to Wales. Her writing and recipes are a love letter to her homeland, a country that she believes is yet to be explored from a culinary point of view. Her books ‘Carpathia’ and ‘Tava’ gained recognition in the U.S., UK, Germany and the Netherlands.  


With a passion for exploring the world through food, discovering new flavours and changing people’s perceptions with recipes, Irina joins us to cook up a delicious Transylvanian feast! 


The menu includes:  

Zacuscă – roasted vegetable spread 

Salată de vinete – chargrilled aubergine spread with red onion served with roasted peppers 

Fasole bătută – Whipped white bean spread topped with paprika caramelised onions 



Ciorbă de salată, Famous Transylvanian lettuce and omelette sour soup served with pickled tarragon cornmeal bread. 


Main course 

Rață cu tăiței cu varză, Pastrami roasted duck leg served with caraway sauerkraut with noodles 



Lichiu, Famous Transylvanian Saxon pie layered with semolina cream and creme fraiche. 

Served with stewed plums
