Photographer, Friend of Fortnum’s and author of both A Portrait of British Cheese and Our Isles Angus D Birditt returns to the Food & Drink Studio to deep dive into the diversity of dairy, looking at how cattle breeds, seasons, fat content, pasteurisation and more play an important part in flavour and usage.
